Organic Roasted Chickpeas

Organic Roasted Chickpeas Production

Production involves cleaning the chickpeas, classifying them in different grades depending on their size, and heating them through several stages. After heating and before undergoing roasting, chickpeas are made to rest for a number of hours. Among the different varieties of chickpeas, those that have a large size are prized for roasted chickpea production. The production process subjects both raw and organic roasted chickpeas to a number of structural changes. Importantly, it leads to the formation of many air pockets inside previously tightly packed raw chickpeas due to chemical and physical changes induced by heating. After having been subjected to heat, chickpeas are rehydrated to raise their moisture level. As the chickpeas are roasted, water particles inside them change from the liquid to the gaseous state. This causes chickpeas to increase in size due to the formation of vapor that pushes against the chickpea walls. Starch gelatinization in chickpeas is limited during roasting, this is likely why water content has an important impact on both swelling and gelatinization.

Did You Know?: Roasted chickpeas have long been served as a beloved snack or appetizer in salted nut mixes in several Middle Eastern countries but also in Greece and India. Children awaiting an important event such as a birthday or feast would be given a number of roasted chickpeas corresponding to the number of calendar days preceding the event, and would be told to eat one chickpea per day to learn patience.

BENEFITS OF Organic Roasted Chickpeas

Organic roasted chickpeas are an excellent source of key vitamins and essential minerals. For example, they are rich in vitamin C and B-complex vitamins as well as potassium. Combined with the soluble fiber they provide, this vitamin and mineral content protects blood vessels from plaque build-up, reduces blood pressure and therefore promotes cardiovascular health. Chickpeas also have anti-inflammatory properties due to their selenium and choline content. Selenium has been linked to the prevention of chronic inflammation, while choline has been linked to the attenuation of excessive inflammation. When the soluble fiber in chickpeas is broken down by bacteria living in the colon, it also leads to the release of butyrate, a short chain fatty acid which reduces inflammation. Chickpeas are well-known for their important protein content which, combined with the insoluble fiber they provide and low glycemic load, allows them to promote satiety and assist in weight management. Insoluble fiber in chickpeas cleanses the colon and inhibits the development of colon cancer. Selenium in chickpeas has also been studied for its cancer-preventing potential. Roasted chickpeas are a convenient way to add chickpeas to one’s diet and benefit from the legume’s anti-inflammatory and cancer-preventing capabilities..
