Apricot Paste Production

The critical control point in apricot paste production is the moisture level, which cannot exceed 25%. The moisture level must be checked using a DFA moisture meter. A moisture level above 25% can lead to fermentation after production.

Apricot paste is prized by food industry actors such as fruit bar producers and pie producers who rely on it as an ingredient. This makes the absence of foreign material and the moisture level in apricot paste all the more critical because nonconformities in these two parameters can affect the shelf life of the product.

Fresh apricots are delicate and fragile fruits that bruise easily during transport. For this reason, they are often harvested before reaching full ripeness, when they are still firm and have not yet achieved their distinctive flavor. For those who live in regions where apricots are not grown, opting for dried apricots and dried apricot paste is a convenient way to enjoy the full sweetness and nutrition of apricots.

HOW TO USE APRICOT PASTE?

Although apricot paste can be enjoyed on its own, it is most often used in baking as a filling for pastries, cakes or cookies. It is commonly used in the preparation of fruit bars or fruit balls as well. Apricot paste can also be relied on to make a delicious fruit-flavored pudding, ice cream or sorbet. Apricot paste can accompany savory dishes as well as sweet dishes. The intense tangy taste of apricot paste pairs well with cheese or charcuterie in appetizer platters. Apricot paste can also be used in compote form or as a glaze for certain meat dishes. In addition, it can be incorporated in sauces and stuffing. Apricot paste can also be blended in drinks such as juices or smoothies.

BENEFITS OF APRICOT PASTE

Apricot paste is an excellent source of carotenoids such as beta-carotene, which is converted by the body into vitamin A. Vitamin A plays an essential role in maintaining healthy eyesight, particularly night vision, and in immune system function, as it promotes white blood cell production and action. Apricot paste is also a good source of both soluble and insoluble fiber. Increasing importance has been attributed to fiber given the growing awareness of its role in the maintenance of a healthy gut flora and digestive system.

Soluble fiber is fermented by friendly gut bacteria which in the process release health-promoting compounds, while insoluble fiber regulates the movement of food through the digestive tract and carries toxins away from the body. Apricot paste can provide a number of essential minerals such as potassium, which is needed for the proper function of the heart and nervous system.
